Nothing says summer like popsicles on hot days. As a kid I remember eating all sorts of popsicles. However, nothing ever tasted as good as these strawberry lemon popsicles taste. This recipe is easy, quick, healthy and will put a smile on everyone’s face. Make them for your family, your kids friends, or even to bring to gatherings.

Summer is always better when you can grab a cold treat that not only cools you down but also tastes great.

Strawberry Lemon Popsicles Ingredients

Most people tend to have strawberries on hand in the summer months. However, we all know how quickly fruit can go bad. If you are like me and live far from town then you probably over buy and then throw away way to much food.

Making these strawberry lemon popsicles is a great way to use fruit that might be on it’s way out. Simple ingredients that most people have on hand.

  • 1 lbs. fresh strawberries
  • 2 lemons, juiced
  • 1 cup water
  • ¼ cup agave nectar – I like Agave in the Raw.

Lemons are also something many keep on hand in the summer because they are used for many things. If you’ve ever done foil packet grilling chances are you’ve used some lemon to squeeze on things like fish or shrimp.

Directions – Strawberry Lemon Popsicles

As I said above, this recipe is so quick and easy that your children could probably make it. Of course, I’d be careful as there is a blender involved, but you get what I’m saying.

Prep time: 10 minutes
Servings: 12 popsicles

  • Remove the crowns from the strawberries and wash them.
  • In a blender, add the strawberries, water, lemon juice (use this lemon squeezer) and agave nectar. I recommend the Ninja Nutra Blender.
  • Blend until it is all smooth.
  • Pour in popsicle molds and put the popsicle sticks in place. I love this popsicle mold.
  • Freeze for at least 6 hours

After about 6 hours the popsicles should be frozen hard and ready to enjoy by all. The fact that this is an easy recipe means even people who are busy can find 10 min to whip it all up and pop it in the freezer.
